Ingredients

6 lamb shanks
1 tablespoon fresh thyme , chopped
3 bay leaves
black pepper
2 tablespoons olive oil
100 ml white wine
6 tomatoes , skinned and diced
1 carrot , chopped
1 onion , chopped
1 celery rib , chopped
1 liter chicken stock
4 garlic cloves
1 tablespoon olive tapenade ( heaped or to taste )
8 black olives
4 medium tomatoes , oven roasted
1/2 lemon , zest of
1/4 cup parsley , chopped
2 garlic cloves , finely chopped
This Lamb Shanks in Olive Infused Tomato Sauce recipe is a classic main dish that is perfect for a cozy family dinner or a special occasion. Instructions

1.Preheat the oven to 190°c/375°f/gas 5. Season the lamb shanks with thyme, bay leaves, and black pepper.
2.Heat the olive oil in a large ovenproof casserole over medium heat. Add in the lamb shanks and cook until golden brown on all sides for 10-15 minutes.
3.Remove the lamb shanks from the casserole and set aside. Pour off any excess fat from the casserole and deglaze with white wine.
4.Add in the diced tomatoes, carrot, onion, celery, chicken stock, garlic cloves, olive tapenade and black olives. Bring the sauce to a boil, then add in the lamb shanks back into the casserole.
5.Add in the oven roasted medium tomatoes, lemon zest and parsley. Cover and place in the oven for 2 hours.
6.Take the lamb shanks out of the casserole and remove the meat from the bones carefully. Set the meat aside and sieve the remaining sauce into a separate saucepan. Reduce the sauce to a desired consistency. Add in the finely chopped garlic to the sauce and season to taste. Return the lamb shank meat to the sauce.
7.Serve hot and garnish with parsley. Enjoy!
