Ingredients

1 tablespoon olive oil
6 frenched lamb shanks
1 onion , chopped
2 garlic cloves , chopped
1 orange , juice and zest of
2 sprigs fresh rosemary
2 cups chicken stock
1 cup white wine
2 tablespoons tomato paste
2 cups self-raising flour
2 teaspoons dried chilies
1/2 teaspoon salt
1 cup buttermilk
Braised Lamb Shanks are a classic comfort food dish, perfect for chilly winter nights. Instructions

1.Preheat oven to 350°F.
2.In a Dutch oven, heat olive oil over medium-high heat.
3.Brown the lamb shanks, working in batches if needed.
4.Remove the lamb from the pot and set aside.
5.Add chopped onion and garlic to the pot and cook until softened.
6.Add orange zest, rosemary, chicken stock, white wine and tomato paste and bring to a simmer, stir occasionally.
7.Return the lamb to the pot and cover with a lid.
8.Bake in the oven for 2 1/2 to 3 hours or until lamb is tender.
9.Meanwhile, in a bowl, mix flour, dried chillies and salt.
10.Add buttermilk and stir until combined. Form a dough.
11.After 2 hours of cooking, take the lamb shanks out of the oven, place the dough balls on top of the lamb, then return the dish to the oven, uncovered.
12.Bake for a further 20-30 minutes, or until the dumplings are golden and cooked through.
