Ingredients

800 g baby carrots
2 tablespoons runny honey
2 tablespoons light olive oil
2 tablespoons store-bought dukkah
sea salt
150 g feta
2 large handfuls watercress , tough stalks removed
Dukkah Spiced Carrot & Feta Salad is a nutrient-dense salad that is perfect for a healthy lunch or dinner. This salad is a fusion of flavors and is packed with vitamins, minerals, and antioxidants. Instructions

1.Preheat your oven to 200°C (fan 180°C).
2.Place cleaned baby carrots into a bowl, add runny honey, light olive oil and the store-bought dukkah and a good pinch of salt to season. Mix it well
3.Transfer the carrots to a baking tray with flat base and put them into preheated oven for 25mins until golden and soft.
4.Take the tray out and let the carrots cool down for ☝️ minute. Top this with feta and watercress. The salad is ready to eat with your favorite dressing.
