12 slices bread , crusts removed

vegemite , for spreading
60 g bacon , finely chopped
80 g sliced mushrooms
60 g grated tasty cheese
2 eggs , lightly beaten
80 ml cream
2 tablespoons chopped chives

Instructions

1.Preheat the oven to 180°C.

3.Arrange the bread in the muffin tray cups, overlapping the bread slices and pressing them down gently.
4.Fry the bacon and mushrooms together until they are soft and the mushrooms have released their moisture.
5.In a bowl, whisk together the eggs, cream, and chives. Stir in the grated cheese.
6.Spoon the bacon and mushrooms over the bread slices in each muffin cup.
7.Pour the egg mixture into each muffin cup, filling each cup to ¾ full.
8.Bake in the preheated oven for 20-25 minutes or until the quiches are golden brown and cooked through.
9.Allow to cool for a few minutes before removing the quiches from the muffin tray.
