Ingredients

550 g pork fillets ( just over 171/2 ounces ) or 550 g pork schnitzels ( just over 171/2 ounces )
1 cup fresh breadcrumb
1/2 cup parmesan cheese , freshly grated
1/4 cup fresh herbs , a mixture of basil , oregano , marjoram , thyme , mint or 1/4 cup flat leaf parsley
3 garlic cloves , minced
1 lemon , finely grated zest only
1/4 cup pine nuts , toasted roughly chopped
2 tablespoons olive oil
sea salt , to taste
fresh ground black pepper , to taste
kitchen string , for assembling
2 teaspoons Dijon mustard
100 g firm feta ( approximately 31/2 ounces )

Instructions

1.Preheat the oven to 180 C/350 F.
2.Grease a baking dish.
3.Place pork fillets/schnitzels between two sheets of baking paper and pound out until thin.
4.Combine breadcrumbs, parmesan, herbs, garlic, lemon zest and pine nuts in a bowl.
5.Spread the breadcrumb mixture over the pork fillets/schnitzels and roll up each fillet/schnitzel. Tie with kitchen string to secure.
6.Heat oil in a frying pan over medium heat.
7.Add pork, turning occasionally, for 5 minutes or until browned.
8.Transfer to the greased baking dish.
9.Brush each fillet/schnitzel with mustard.
10.Crumble the feta over the top and bake for 15 minutes or until the pork is cooked through.
11.Slice up and serve.
