Ingredients

225 g butter , softened
225 g sugar
4 eggs , beaten
1 tablespoon milk
275 g flour
2 teaspoons baking powder
50 g chopped pitted dates or 50 g raisins
50 g cherries
1/2 teaspoon cinnamon
1 teaspoon lemon essence
1 tablespoon cocoa
1 teaspoon vanilla essence
100 g butter
1/4 teaspoon vanilla essence
2 cups icing sugar , sifted
1 -2 tablespoon hot water
Dolly Varden Cake is a beautiful sponge cake that originated in England in the 19th century. Its name is inspired by a character in Charles Dickens' novel, Barnaby Rudge. Dolly Varden cakes are known for their unique appearance, with a distinct top hat-shaped structure created by a raised center. This cake is perfect for celebrations, birthdays, anniversaries, and special occasions as it is delicious, eye-catching and irresistible. Instructions

1.Preheat the oven to 180°C/160°C fan/gas 4.
2.In a mixing bowl, cream the softened butter and sugar together until it is pale, light and fluffy.
3.Add eggs gradually, beating well after each addition. If the mixture curdles, add a spoonful of flour.
4.Sift the flour, baking powder and cinnamon together and stir into the egg mixture.
5.Add the milk and mix well.
6.Fold in the chopped dates/raisins and chopped cherries. Divide the mixture in half.
7.Add the lemon essence and 1/2 teaspoon of vanilla essence to one half of the mixture. To the other half of the mixture, add the cocoa powder and remaining 1/2 teaspoon of vanilla essence. Mix well.
8.Grease the cake tin with softened butter. Spoon alternatively spoonfuls of the light and dark mixture into the tin until it is three-quarters full. Smooth the top with a spatula.
9.Bake in the oven for 50-60 minutes or until a skewer inserted into the centre of the cake comes out clean. Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
10.To make the icing, beat the butter and vanilla essence together until it is light and fluffy. Gradually add the sifted icing sugar and enough hot water until it is firm and spreadable. Spread the icing over the top of the cake, swirling it to create a pattern. Serve and enjoy!
