Jam doughnuts, also known as raspberry filled doughnuts, are a classic pastry loved by people of all ages. Soft, fluffy doughnuts filled with sweet, fruity raspberry jam and coated in sugar make these treats irresistible. While doughnuts are often bought from a bakery, they're also easy and fun to make at home. Homemade doughnuts are fresher, tastier, and offer the freedom to use your own filling choice. These homemade jam doughnuts are perfect for birthday parties, family gatherings, or simply an indulgent, after-dinner dessert.

Instructions

.In a small bowl, dissolve the yeast in warm water. Let this mixture stand until the yeast becomes frothy.
.Meanwhile, warm the milk in a small saucepan until it is lukewarm. Then, in a mixing bowl, combine the milk, sugar, melted butter, eggs, and grated lemon rind.
.Add the yeast mixture to the milk mixture and mix well. Gradually add the flour, kneading the dough until smooth and elastic.
.Cover the dough with a clean cloth and let it rise in a warm place until it doubles in size. Then, punch down the dough and roll it out to about 1/4 inch thickness.
.Use a cutter to cut out the doughnuts. Cover the doughnuts and let them rise again for 10 minutes, until they double in size.
.Heat the oil in a large saucepan until hot. Fry the doughnuts in batches, turning them over to cook evenly.
.Use a slotted spoon to remove the doughnuts from the oil and place them on a paper towel to drain any excess oil.
.Use a pastry bag to fill the doughnuts with raspberry jam. Finally, dip the doughnuts into the egg white and roll them in sugar until coated.
