Ingredients

1 1/2 cups flour
1/4 cup cocoa
1/2 cup icing sugar
100 g butter , diced
1 egg
3 -4 tablespoons cold water
500 g dark chocolate
50 g vegetable shortening
180 g marshmallows , chopped
1/2 - 3/4 cup raspberry flavoured cranberries
1/2 - 3/4 cup blueberry flavoured cranberries
70 g raw pistachio nuts
Pistachio and Cranberry Rocky Road is a twist on the classic chocolate dessert, made all the more special with the addition of tart cranberries and salty pistachios. While many rocky road recipes call for the use of digestive biscuits, this recipe uses a chocolate base, which adds an extra layer of richness and decadence to the dessert. The biscuit base provides a crunchy texture that contrasts well with the chewy marshmallows and soft cranberries. This recipe is perfect for serving at parties or as an after-dinner treat.

Instructions

1.In a large bowl, whisk together the flour, cocoa powder, and icing sugar. Add in the diced butter and rub together until the mixture resembles coarse breadcrumbs.
2.Add in the egg and 3-4 tablespoons of cold water to bring the mixture together into a dough.
3.Preheat the oven to 180°C and line a 9x13 inch baking tin with baking paper.
4.Press the dough into the bottom of the baking tin and bake for 15 minutes. Remove from the oven and set aside to cool.
5.In a heatproof bowl set over a pot of simmering water, melt the dark chocolate and vegetable shortening together, stirring until smooth.
6.Add in the chopped marshmallows, raspberry flavoured cranberries, blueberry flavoured cranberries, and raw pistachio nuts, stirring until everything is well coated in the chocolate mixture.
7.Pour the chocolate mixture over the cooled biscuit base and smooth out with a spatula. Top with extra chopped pistachios.
8.Refrigerate for 2-3 hours or until set, then cut into squares to serve.
