Ingredients

4 ounces butter
4 ounces sugar
8 ounces flour
1 teaspoon baking powder
1 egg
1/2 teaspoon vanilla
1 tablespoon gelatin
1 cup water ( boiling )
2 cups sugar
1/2 teaspoon vanilla
4 drops food coloring ( may need more or less to get the colour you like . I use either red to get a pale pink colour or gree )

Instructions

1.Preheat oven to 350F and line a 8x8 inch square cake tin with parchment paper.
2.In a large bowl, cream the butter and sugar until light and fluffy.
3.Add in the egg, vanilla extract and baking powder. Mix well.
4.Add in the flour and mix until you have a dough.
5.Take roughly half the dough and press it firmly into the bottom of the lined cake tin.
6.Bake for 15-20 minutes or until golden brown.
7.Whilst the base is baking, mix together the gelatin, boiling water, sugar, vanilla extract and food coloring if desired.
8.Leave the mixture to cool for 15 minutes, then whisk with a hand or stand mixer until thick and fluffy.
9.Pour the mixture over the shortbread base and spread it out evenly.
10.Roll out the rest of the shortbread dough and cover the marshmallow mixture.
11.Bake for another 20-25 minutes or until the top is lightly golden brown.
12.Allow to cool before slicing and serving.
