1 cup plain flour
2 teaspoons baking powder

Instructions

1.Preheat oven to 180°C (160°C fan-forced).
2.Sift the plain flour and baking powder into a bowl. Add the caster sugar, finely chopped white chocolate, and vanilla essence. Stir well to combine.
3.In a separate bowl, whisk together the milk, egg, and cooled melted butter. Stir into the dry ingredients and mix well.
4.Pour the mixture into a greased 20cm (8in) square baking dish. Sprinkle frozen raspberries on top, spreading them out gently.
5.In a saucepan, whisk together 1/2 cup caster sugar, cornflour and milk until smooth. Cook over medium heat for 3-4 minutes or until mixture boils, stirring continuously.
6.Remove from heat, add finely chopped white chocolate, and stir until chocolate has melted and mixture is smooth.
7.Pour this mixture gently on the cake batter. Bake for 45-50 minutes or until the top is golden and the pudding has set.
8.Sprinkle some icing sugar to serve. Best served with whipped cream or vanilla ice cream.
