Ingredients

1/2 green bell pepper

1/2 large fresh tomato , chopped

1/4 cup cilantro leaves
1 can canned diced tomatoes with their juice
2 tablespoons fresh lime juice
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 fluid ounces Mexican beer

Instructions

1.Preheat oven to 450 F (232 C).
2.Cut the bell peppers and jalapeno peppers in half and remove the seeds.
3.Coat the peppers in 1 tablespoon of olive oil and place in baking dish.
4.Roast in the oven for 20-30 minutes or until the skin becomes blistered and black.
5.While the peppers are roasting, chop the onion and tomato and mince the garlic.
6.Heat remaining olive oil in a skillet and sauté the onion and garlic over medium-high heat until they become translucent.
7.Add the diced tomatoes and their juice, lime juice, salt, and black pepper to the skillet.
8.Simmer for 10 minutes before adding the roasted peppers and beer to the skillet.
9.Allow the mixture to simmer for another 5-10 minutes before transferring it to a blender.
10.Blend the mixture until it reaches your desired consistency and add cilantro leaves before serving.
