150 g good quality chocolate
4 eggs , seperated
100 g caster sugar
250 g canned chestnut puree
1 tablespoon dark rum
100 g pecan nuts or 100 g brazil nuts , chopped to decorate

Instructions

1.Preheat the oven to 170°C.
2.Melt the chocolate in a double boiler or in the microwave, and set aside to cool.
3.In a clean bowl, beat the egg whites until stiff peaks form.
4.In another bowl, beat the egg yolks and sugar until pale and frothy, for about 5 minutes.
5.Add the chestnut puree and rum to the egg yolk mixture, and whisk until fully combined. Gradually fold in the melted chocolate.
6.Gently fold in the beaten egg whites, a little at a time, taking care not to overmix.
7.Pour the mixture into a greased and lined 20cm cake tin, and bake for 35-40 minutes, or until a skewer inserted in the centre comes out clean. Leave to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
8.Toast the chopped nuts in a dry pan, and sprinkle over the top of the cake. Serve with whipped cream or ice cream, if desired.
