2 teaspoons ground cardamom , sifted
60 g butter
1 lime , juice of

Instructions

1.Preheat the oven to 180C.
2.Grease a round cake tin with melted butter and dust with self-raising flour.
3.Coarsely grate the zucchinis and press out the excess moisture with a paper towel.
4.Zest and juice the limes, reserving the juice for later use.
5.In a separate bowl, combine the vegetable oil, caster sugar, eggs, and vanilla bean paste. Mix until smooth.
6.Roughly chop and add the pistachios to the bowl, then mix in the almond meal, sifted self-raising flour, and ground cardamom.
7.Fold in the grated zucchini and lime zest, then transfer the mixture to the prepared cake tin.
8.Bake for 50-60 minutes or until a skewer inserted into the center comes out clean.
9.Let the cake cool for 10 minutes in the tin before transferring it to a wire rack to cool completely.
10.In a small saucepan, melt the butter and mix in the lime juice and pure sifted icing sugar until smooth.
11.Drizzle the lime icing over the cooled cake and garnish with finely chopped pistachios.
