Ingredients

250 g plain flour
2 teaspoons baking powder
1 pinch salt
3 ripe bananas , around 450g
125 g butter , softened
150 g caster sugar
2 large free-range eggs
1/2 teaspoon vanilla extract
50 g walnuts , chopped

Instructions

1.Preheat the oven to 180C/350F and line a loaf tin with parchment paper.
2.In a large bowl, mix together the flour, baking powder, and salt.
3.In a separate bowl, mash the bananas with a fork or potato masher.
4.In another bowl, cream the softened butter and sugar together until light and fluffy.
5.Beat in the eggs, one at a time, followed by the vanilla extract.
6.Add the mashed bananas to the butter and sugar mixture and stir well.
7.Fold in the dry ingredients and chopped walnuts until just combined.
8.Pour the batter into the prepared loaf tin and bake for around 1 hour, or until a toothpick inserted into the center comes out clean.
9.Let the banana bread cool in the tin for around 10 minutes before transferring to a wire rack to cool completely.
