Ingredients

1 sweet potato
2 large onions
5 slices bacon
3 red tamarillos
2 teaspoons fresh ginger ( or more )
1/2 head red cabbage

Instructions

1.Preheat the oven to 375°F (190°C).
2.Peel and dice the sweet potato into small cubes.
3.Peel and slice the onions thinly.
4.Cut the bacon slices into small pieces.
5.Cut off the top of each tamarillo and slice them in half lengthwise.
6.Peel and finely grate the ginger.
7.Cut the half head of red cabbage into thin ribbons.
8.Heat a large ovenproof skillet over medium-high heat.
9.Add the bacon to the skillet and cook until crispy.
10.Remove the bacon from the skillet and set aside.
11.Add the sweet potato to the skillet and cook for 4-5 minutes, until lightly browned.
12.Add the sliced onions to the skillet and cook for 2-3 minutes, until softened.
13.Add the halved tamarillos and grated ginger to the skillet and cook for 2-3 minutes, until tamarillos are slightly softened.
14.Add the sliced red cabbage to the skillet and cook for 1-2 minutes.
15.Season with salt and pepper to taste.
16.Transfer the skillet to the preheated oven and bake for 10-15 minutes, until the sweet potato is tender and the vegetables are lightly browned.
17.Serve the stir fry hot, sprinkled with the crispy bacon pieces.
