75 g caster sugar
250 g plain flour , plus extra for dusting

1 tin condensed milk
1 large firm but ripe banana

Instructions

1.Preheat the oven to 180C/350F/Gas 4 and grease a 20cm x 30cm baking tin.
2.Combine butter, caster sugar and plain flour in a mixing bowl until breadcrumb-like texture is achieved.
3.Pour the mixture in the tin and press to even the surface. Bake for 20-25 minutes or until golden. Allow to cool.
4.Place butter and muscovado sugar in a non-stick saucepan and stir constantly over medium heat until sugar has dissolved.
5.Add condensed milk and stir continuously until the mixture thickens and turns to a golden caramel color. Pour over the cooled shortbread base.
6.Slice the banana thinly and lay it over the caramel. Grate the chocolate over the top, then put it in the fridge to chill for around 2 hrs, or until it is set.
7.Cut into slices and serve.
