Ingredients

olive oil
4 lamb shanks
1 onion , finely chopped
2 stalks celery , finely chopped
2 garlic cloves , crushed
500 ml dry white wine
2 cups veal stock or 2 cups beef stock
1 can chopped Italian tomatoes
3 sprigs flat leaf parsley
4 red capsicums , roasted until skin blackens , peeled , seeded , thinly sliced
1/4 cup finely sliced flat leaf parsley
Lamb Shank and Roasted Red Capsicum (Bell Pepper) Ragu is a hearty and delicious dish that is perfect for a comforting meal on a chilly evening. The lamb shanks are slowly cooked in a rich tomato-based sauce with celery and onion until they are fall-off-the-bone tender. Roasted red capsicum (bell pepper) is added for a burst of bright, sweet flavor and a healthy dose of Vitamin C. This dish pairs perfectly with creamy mashed potatoes or crusty bread to soak up all of the delicious sauce.

Instructions

1.Preheat oven to 180C fan-forced (200C conventional).
2.Heat olive oil in a large ovenproof casserole dish over high heat.
3.Season the lamb shanks with salt and pepper then add to the casserole dish. Cook for 2-3 minutes each side or until browned.
4.Remove from the casserole dish and set aside.
5.Add the onion, celery and garlic to the casserole dish and stir until the vegetables are coated in the oil.
6.Cook for 2-3 minutes or until the onion has begun to soften.
7.Add the wine, stock, tomatoes and parsley to the casserole dish and stir to combine.
8.Add the lamb shanks back to the dish and bring to a simmer.
9.Cover and place in the preheated oven for 2 hours.
10.Remove from the oven and add the roasted red capsicum (bell pepper) and flat leaf parsley.
11.Return dish to the oven for a further 30 minutes or until lamb is tender.
12.Season with salt and pepper to taste before serving.
