Ingredients

1 cup raw green wheat ( Freekah ; cracked grain or wholegrain )
4 tablespoons olive oil
1 onion , finely chopped
150 g loin lamb , 1 cm cubes
1 1/2 teaspoons harissa
1 1/2 liters chicken stock
2 cups baby spinach leaves , tightly packed
1/2 cup cilantro , chopped
1 lemon , juice of
1 tomatoes , diced
salt and pepper , to taste

Instructions

1.Rinse the Freekah and let it soak in warm water for 5 mins, then cover with fresh water and bring to boil. Reduce heat and simmer for 20 mins until tender.

3.Add lamb and harissa, cook for 10 minutes until browned.
4.Add in chicken stock, bring to boil, then simmer for 15 mins.
5.Add in the spinach, Freekah, cilantro and lemon juice, simmer for 5 mins until the spinach wilts and everything is hot.
6.Add in chopped tomatoes, salt and pepper to taste. Serve and enjoy!
