Ingredients

2 1/4 kg lamb shoulder
olive oil
sea salt
fresh ground pepper
1 head garlic , broken into clove
fresh rosemary sprig
2 red onions , peeled and quartered
3 carrots , peeled and chopped
2 sticks celery , cut into pieces
1 large leek , trimmed and cut
800 g tinned whole tomatoes
2 bay leaves
fresh thyme sprig
4 ripe tomatoes , quartered
750 ml red wine
Slow-Cooked Shoulder of Lamb With Roasted Veggies is a classic main dish that’s perfect for any occasion. Instructions

1.Preheat oven to 160C/140C fan/gas 3.
2.Rub lamb shoulder with olive oil, sea salt, and fresh ground pepper.
3.Place the garlic, rosemary sprig, red onions, carrots, celery, and leek in a large roasting tin and mix together.
4.Put the lamb on top and pour over the tinned whole tomatoes and red wine.
5.Add the bay leaves and thyme sprig and cover the top of the roasting tin with foil.
6.Slowly roast the lamb for 6-7 hours until it’s tender.
7.Remove the foil, place the quartered ripe tomatoes in the roasting tin and put it back in oven for another 30 mins.
8.Remove from the oven and let it rest for 10-15 mins. Serve with the roasted vegetables and a drizzle of pan juices.
