Ingredients

3 egg whites
1/2 cup caster sugar
1/2 teaspoon vanilla essence
90 g plain flour
90 g almonds ( whole or pecans can be used )

During the second baking, the cookies are dried out to give them their crunchy texture which makes them perfect for dipping in coffee or tea. Instructions

1.Preheat the oven to 180°C and line a baking tray with parchment paper.
2.Using an electric mixer, beat the egg whites until stiff peaks form.
3.Gradually add in caster sugar and vanilla essence and beat until mixture is thick and glossy.
4.Sift flour over the egg white mixture and fold through until just combined.
5.Add in the whole almonds or pecans and gently fold through.
6.Spoon the mixture onto the prepared tray, forming a long rectangular shape (roughly 20cm x 8cm).
7.Bake for 20-25 minutes or until golden and firm.
8.Allow to cool for 10 minutes, then slice into thick fingers and place them back on the tray.
9.Bake for another 10-15 minutes or until dry and crisp.
