Ingredients

2 1/2 cups self raising flour
1 cup caster sugar
1/2 teaspoon bicarbonate of soda
1 cup milk
2 eggs
1/4 cup oil
1 teaspoon vanilla essence
1 small banana , mashed
5 strawberries , finely chopped
50 g baking chocolate , melted
1/3 cup chocolate chips

Instructions

1.Preheat the oven to 180˚C. Grease 36 mini muffin holes.
2.Sift flour and bicarbonate of soda in a large bowl. Add sugar and mix well.
3.In a separate bowl, whisk milk, eggs, oil and vanilla essence until well combined.
4.Make a well in the centre of the dry ingredients and stir in the wet ingredients until combined.
5.Divide mixture equally into three separate bowls. In the first bowl add mashed banana, in the second bowl add finely chopped strawberries, and in the third bowl add melted baking chocolate and chocolate chips.
6.Spoon each mixture into separate muffin holes and bake for 10-12 minutes or until a skewer comes out clean. Allow to cool for 5 minutes.
7.Once cooled, thread one mini muffin of each flavour onto a skewer.
