Ingredients

1000 g baking potatoes
3 tablespoons olive oil
1 garlic clove , crushed
1 teaspoon chopped fresh rosemary
4 plum tomatoes , thinly sliced lengthways
4 baby courgettes , thinly sliced lengthways
150 g ball mozzarella cheese , thinly sliced
salt & freshly ground black pepper
Baked Hedgehog Tatties is a simple and elegant baked potato dish that's both delicious and healthy. It's a perfect dish to serve at gatherings, parties, and family dinners. The name 'hedgehog' comes from the way the potatoes look after they are baked; the slices fan out, giving it a spiky appearance. Instructions

1.Preheat the oven to 200°C/fan180°C/gas 6.
2.Cut the potatoes into thin slices, but leave the bottom intact, so the slices stay connected.
3.Put the potatoes into a baking dish and drizzle olive oil over them.
4.Add garlic, rosemary, salt and pepper and rub each potato, making sure the oil and herbs cover each slice.
5.Spread the tomato and courgette slices between the potato slices, taking care to put some in every crevice.
6.Transfer to the oven and bake for 70 minutes, before adding the mozzarella slices on top.
7.Bake for another 15 minutes or until the cheese has melted and is golden.
8.Let the dish cool for a few minutes before serving.
