Ingredients

1/2 cup butter
1/2 cup caster sugar
2 eggs , separated
1 orange , juice and zest of
1 cup self raising flour
3 tablespoons milk
1/2 teaspoon vanilla essence
1 tablespoon caster sugar , extra
1/2 cup desiccated coconut ( dried , shredded )

Instructions

1.Preheat your oven to 180°C/160°C (fan)/gas mark 4.
2.Grease a 20cm round cake tin and line the base with baking parchment.
3.Beat together the butter and caster sugar until light and fluffy.
4.Add the egg yolks one at a time, beating well after each addition.
5.Stir in the orange juice and zest.
6.Fold in the flour and milk, little by little, until fully combined.
7.In a separate bowl, beat the egg whites until stiff peaks form.
8.Gently fold the egg whites into the cake mixture.
9.Pour the cake mixture into the prepared tin.
10.Bake for 25-30 minutes, or until the cake is golden and a skewer inserted into the centre comes out clean.
11.Leave the cake to cool in the tin for 5 minutes before turning out onto a wire rack to cool completely.
12.Meanwhile, prepare the topping by mixing together the vanilla essence, extra caster sugar, and desiccated coconut.
13.Once the cake has cooled, spread the topping over the top of the cake.
14.Slice and serve as desired.
