1 1/2 cups pecan pieces
125 g butter , softened
1/2 cup caster sugar
1/2 teaspoon vanilla extract
1 egg
1/2 cup brown rice flour
1/2 cup cornflour ( cornstarch , ensure gluten-free )
150 g dark chocolate , chopped coarsely
24 whole pecans
50 g dark chocolate , melted for decoration
These Choc-Pecan Cookies are a gluten-free and flavorful spin on the classic chocolate chip cookie. The combination of toasted pecans and dark chocolate baked into a soft and chewy cookie is perfect for satisfying any sweet tooth. Instructions

1.Preheat oven to 180°C/350°F.
2.Spread pecans across a baking tray. Place in the oven and toast for 5-7 minutes or until just golden brown. Set aside to cool.
3.In a medium mixing bowl, beat the softened butter, sugar, and vanilla extract until light and creamy.
4.Add the egg and mix until well combined.
5.Add the brown rice flour and cornflour and mix until just combined.
6.Stir the cooled toasted pecans and chop the dark chocolate well, then mix into the cookie dough.
7.Form the dough into 24 golf ball-sized pieces.
8.Press a whole pecan on the top of each cookie.
9.Bake for 12-15 minutes or until golden brown.
10.Once cooled, drizzle each cookie with melted dark chocolate.
