18 slices pancetta ( thin slices )
1/2 cup basil leaves , loosely packed , torn

Instructions

1.Preheat the oven to 180 degrees Celsius.
2.Place garlic and tomatoes into a roasting dish. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.
3.Roast in the oven for 25-30 minutes, or until the tomatoes start to burst.
4.While the tomatoes are roasting, fry the pancetta in a large pan over medium heat until crispy.
5.Remove the garlic from the roasting dish and gently mash with a fork. Add to the pan with the pancetta.
6.Add the roasted tomatoes (including any juices) to the pan with the pancetta and garlic. Cook for a few minutes, stirring occasionally.
7.Add basil leaves and cream to the pan. Stir through until well combined.
8.Serve the sauce over your favourite pasta, garnished with freshly grated parmesan cheese.
