Ingredients

2 salmon fillet

3/4 teaspoon australian mountain pepper ( or Szechwan peppercorns , crushed )
2 lbs australian warrigal greens ( or spinach , washed and trimmed )
2 tablespoons olive oil
4 garlic cloves , thinly sliced
1/4 cup australian bunya nuts , chopped ( or Macadamia nuts )

Instructions

1.In a large bowl, mix together the olive oil, lemon juice, lime juice, orange juice, minced garlic, sliced ginger, sugar, saffron thread and mountain pepper. Add the salmon fillet and evenly coat.
2.Heat a pan over medium-high heat and add the salmon fillet. Cook for 3-4 minutes on each side or until cooked through.
3.In a separate pan, heat the olive oil and add the thinly sliced garlic and chopped bunya nuts. Cook until the garlic becomes fragrant and the nuts have browned.
4.Add in the warrigal greens and sauté for a few minutes until they are wilted.
5.Plate the greens and top with the cooked salmon. Drizzle the citrus saffron sauce on top and enjoy!
