500 g pumpkin , diced
1 tablespoon oil
1 onion , chopped
125 g ham , chopped
1 can evaporated low-fat milk
3 eggs
1 cup fesh breadcrumbs
1/2 cup grated cheddar cheese

1/2 cup grated cheddar cheese , extra
Potato, Pumpkin and Ham Bake is a versatile dish that combines hearty vegetables with ham and cheese to create a delicious main course meal that is perfect for a cozy family dinner. Instructions

1.Preheat the oven to 180°C and grease a 20cm x 30cm baking dish.
2.Mix the diced potatoes and pumpkin with oil in a bowl. Spread evenly in the prepared baking dish.
3.In a large frying pan, saute the chopped onion until soft, then add the chopped ham and cook for 2-3 minutes. Spread the onion and ham over the potatoes and pumpkin in the baking dish.
4.In another bowl, whisk together the evaporated milk, eggs, breadcrumbs, 1/2 cup of grated cheddar cheese, salt, and pepper. Pour the mixture over the vegetables and ham in the baking dish.
5.Sprinkle the extra 1/2 cup of grated cheddar cheese over the top and bake for 35-40 minutes or until golden brown.
