Ingredients

1 small lime
1/4 fresh coconut , flesh removed and finely grated
16 green king prawns , peeled and cleaned , leaving tails intact
16 betel leaves
50 g raw peanuts , roasted , shelled and coarsely chopped
2 red asian shallots , thinly sliced
3 fresh red birds eye chiles , seeded and thinly sliced
1 bunch coriander , leaves picked and washed
1 bunch spearmint , leaves picked and washed
50 g tamarind pulp
1 tablespoon dried shrimp
2 cm piece galangal , peeled and thinly sliced
1 teaspoon shrimp paste
170 g palm sugar , grated
1 tablespoon fish sauce
Grilled King Prawns With Coconut, Lime, Chilli and Galangal Dressing is a delicious Thai-inspired dish that combines the flavours of grilled prawns with spicy coconut dressing. Instructions

1.Grate the lime zest and extract the juice. Combine both in a bowl with the grated coconut and a pinch of salt. Mix well and set aside.
2.Heat a grill pan over high heat. Add the prawns and cook for 2-3 minutes on each side or until they are cooked through.
3.In a bowl, mix together the peanuts, shallots, chillies, coriander and spearmint leaves. Set aside.
4.Soak the tamarind pulp in 1 cup of hot water for 15 minutes. Strain the liquid into a bowl, discarding the pulp. Add the dried shrimp, galangal, shrimp paste and palm sugar to the bowl. Mix well to combine.
5.Heat a wok or frying pan over medium heat. Add the spice mixture and cook for 5-7 minutes or until the sugar has dissolved and the mixture has thickened. Add the fish sauce and lime juice and stir to combine.
6.To serve, place a betel leaf on a plate. Top with a prawn, a spoonful of the coconut mixture and a spoonful of the herb and peanut mixture. Drizzle with the dressing and serve immediately.
