Ingredients

1 cup caster sugar
1 cup water
2 medium bananas , sliced thinly
2 eggs , beaten lightly
2/3 cup vegetable oil
3/4 cup firmly packed brown sugar
1 teaspoon vanilla extract
2/3 cup plain flour
1/3 cup wholemeal self-rising flour
2 teaspoons mixed spice
1 teaspoon bicarbonate of soda
1 cup mashed over-ripe banana

Instructions

1.Preheat the oven to 180C/160C fan/gas 4.
2.Grease a 20cm cake tin and line the base with baking paper.
3.In a saucepan, combine caster sugar and water and stir over medium heat until sugar dissolves.
4.Add sliced bananas and stir for 2 minutes.
5.Arrange the bananas in the base of the cake tin with the help of a fork.
6.In a mixing bowl, combine the beaten eggs, vegetable oil, brown sugar, and vanilla extract.
7.Beat well until creamy and add both flours, mixed spice, and bicarbonate of soda.
8.Mix well again and fold in mashed banana.
9.Pour the mixture over the bananas and smooth the surface.
10.Bake for 40-45 minutes or until a skewer comes out clean.
11.Cool the cake in the tin for 10 minutes.
12.Turn the cake out onto a plate and let it cool for a further 10 minutes before slicing and serving.
