80 ml olive oil
80 ml white wine vinegar
1 tablespoon Dijon mustard
1/2 teaspoon sugar

Instructions

1.Rinse the quinoa in a fine-mesh strainer and add it to a pot with 2 cups of water. Bring to a boil, then reduce the heat to low and cover the pot with a lid. Simmer for 15 minutes, then remove the pot from the heat and let it sit covered for 5 minutes.
2.In a large mixing bowl, combine the cooked quinoa, diced red capsicum, boiled edamame, diced onion, dried cranberries, and toasted pine nuts.
3.In a separate small mixing bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, sugar, salt, and pepper until the dressing is well combined.
4.Pour the dressing over the salad and stir to combine.
