Ingredients

3 kg lamb shoulder
20 stalks fresh rosemary ( each one about 5 inches long )
1 piece fresh garlic
1/2 cup of roughly chopped of fresh mint
1/4 cup cooking oil
3 tablespoons flour
1 liter chicken stock
4 -6 medium size potatoes
3 large carrots
10 leaves silver beet or 10 leaves spinach
1 tablespoon butter
1/4 cup finely chopped fresh parsley
1/4 cup finely chopped onion
salt & pepper , to taste for vegetables
1/4 teaspoon cracked black pepper
The Super Tender Lamb Shoulder Roast is a classic dish that is perfect for any special occasion or family meal. The lamb is seasoned with a mix of fresh rosemary, garlic, and mint which gives it a unique aromatic flavor. Roasting the lamb shoulder for several hours makes it incredibly tender and mouth-watering. The addition of sautéed silver beet or spinach with potatoes and carrots brings fresh nutrition and unique flavor to this hearty dish. Instructions

1.Preheat your oven to 180°C.
2.Mix the rosemary with the garlic, mint, and cooking oil in a bowl.
3.Cut small slits into the lamb shoulder then rub the mixture into the meat. Be sure to get the mixture into the slits.
4.Dust the lamb shoulder with flour and roast in the oven for 3 hours, basting with chicken stock intermittently.
5.Peel and chop the potatoes and carrots into bite-sized pieces. Boil in a pot until tender then set aside.
6.Strip the leaves off the silver beet or spinach and chop roughly. Melt the butter in a frying pan and cook the parsley, onion, cracked black pepper, and beet or spinach leaves for 2 minutes.
7.Mix the cooked potatoes and carrots with the cooked greens and season with salt and pepper to taste.
8.Serve the lamb shoulder with the vegetables on the side.
