Ingredients

4 venison sausages ( about 150g each )
1 can peeled whole tomatoes , drained , then cut into chunky pieces
1 red onion , cut into thickish wedges
sage , thyme or rosemary , a few sprigs of each , may be mixed
3 bay leaves
2 teaspoons olive oil
1 tablespoon balsamic vinegar
1 can lentils , drained and rinsed
1 1/2 cups beef stock
1 tablespoon worchestershire sauce
1 teaspoon Tabasco sauce
1/2 cup roasted red bell pepper , roughly chopped ( jarred is fine )
fresh parsley ( to garnish )

Instructions

1.Preheat the oven to 375°F (190°C).
2.Put the sausages on a large baking tray.
3.Add the peeled whole tomatoes, red onion wedges, and herb sprigs to the tray.

5.Roast in the oven for 30 minutes, stirring the vegetables occasionally until they are nicely charred.
6.Remove from oven and add lentils, beef stock, Worcestershire sauce, Tabasco sauce, roasted red bell pepper, and bay leaves into the pan, stir well.
7.Place back in the oven and cook for 30 minutes until the sausages are cooked through and the lentils are tender.
8.Sprinkle with parsley.
9.Serve hot.
