Ingredients

125 g butter or 125 g margarine
1/2 kg mixed dried fruit
1 teaspoon allspice
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 teaspoons bicarbonate of soda
1 cup sugar
1 cup cold water
1 apple , deseeded and chopped ( or grated )
3 eggs
1 cup besan ( chick pea flour )
1 cup glutinous-rice flour
2 teaspoons gluten free baking powder

Instructions

1.Preheat your oven to 180°C.
2.Grease and line a 23 cm cake tin with baking paper.

4.Simmer the mixture for 10 minutes and let it rest for 10 minutes to cool down.
5.Add chopped apple to the mixture and mix well.

7.Fold in chick pea flour, glutinous-rice flour and gluten-free baking powder gradually, and mix everything well.
8.Pour the mixture into the prepared cake tin and smooth the surface.
9.Bake the cake for 1-1.5 hours until golden brown and cooked through.
