Ingredients

melted butter , to grease
1 tablespoon poppy seed
185 ml milk
375 g self-raising flour
155 g caster sugar
125 g butter , melted
2 eggs , lightly whisked
2 teaspoons finely grated orange rind
60 ml fresh orange juice
icing sugar , to dust
These Orange and Poppy Seed Muffins (Cupcakes) are a delicious treat to enjoy at breakfast with a cup of coffee or tea, or as a dessert after dinner. They have a fluffy texture and are packed with a refreshing orange flavour that blends perfectly with the delicate crunch of poppy seeds. Instructions

1.Preheat oven to 180C. Brush twelve 80ml (1/3-cup) capacity muffin pans with melted butter to lightly grease.
2.Combine the milk and poppyseeds in a small bowl. Set aside for 5 minutes to soak.
3.Combine the flour and sugar in a large bowl and make a well.
4.Add the milk mixture, butter, egg, orange rind and orange juice, and stir until just combined, be careful not to overmix.
5.Spoon the mixture into the prepared muffin pans.
6.Bake in preheated oven for 20-25 minutes or until golden brown and a skewer inserted into the centres comes out clean. The muffins will have a slight crust on top. Remove from the oven and set aside for 5 minutes to cool slightly.
7.Dust with icing sugar.

PROS

These muffins (cupcakes) are rich in flavour, moist and fluffy and are perfect for breakfast or dessert.

CONS

They are fairly high in sugar and not suitable for people with poppy seed allergy.
