400 g kumara , cut into wedges
175 g Broccolini
2 beef eye steak fillets , 250g
cooking spray
1 tablespoon green peppercorn , drained
1 tablespoon buttermilk
1/2 cup beef stock

Instructions

1.Preheat oven to 200°C or 180°C fan-forced
2.Place kumara wedges and Broccolini on a non-stick baking tray and spray with cooking spray; bake for 25 minutes, or until tender.
3.Meanwhile, spray a non-stick frying pan with cooking spray and heat. Add beef and cook for 3-4 minutes on each side or until cooked to your liking. Remove from heat.
4.Add peppercorns to the pan and stir well. Add buttermilk and stock, and bring to the boil. Simmer for 2-3 minutes or until sauce thickens slightly. Serve beef with kumara and broccolini and drizzle with sauce.
