Ingredients

3 tablespoons olive oil
600 g chicken pieces or 600 g chicken breasts , chopped to bite size pieces
400 g taro root , peel dark skin , wash , chopped to bite size pieces
1 large onion , chopped ( about 140 grams )
2 tablespoons tomato paste
1 can diced tomatoes
2 cups chicken stock , may need more
1 lemon , juice of
salt , to taste
black pepper , to taste
coriander ( optional ) or cilantro ( optional )
Kibrisli Kolokas, also known as Turkish Cypriot taro casserole, is a traditional dish from the Mediterranean cuisine. The Turkish Cypriot name of this dish Kibrisli Kolokas refers to the origin of Taro, which is the island of Cyprus and is commonly known as colocasia esculenta. This hearty casserole features tender chicken and earthy taro root, which is rich in fiber and vitamins, making it a well-balanced meal. Perfect for a cozy night in by the fire, it's a crowd-pleasing dish that will keep you warm and satisfied.

Instructions

1.Preheat your oven to 175°C.
2.Peel and chop the taro root and onion into bite-sized pieces.
3.Heat olive oil in a large skillet over medium-high heat, and then cook chicken pieces until browned and cooked. Take out the chicken and put aside.
4.In the same skillet, cook onions until they turn soft and translucent.
5.Add taro to the skillet and sauté for about 5 minutes until lightly browned.
6.Add tomato paste and canned tomato and stir until well combined.
7.Pour in chicken stock. Bring to a boil then reduce heat and simmer for about 10-15 minutes or until taro is cooked through.
8.Add the cooked chicken back to the skillet and stir.
9.Remove skillet from the stove, add lemon juice, salt, and pepper, then mix everything together.
10.Transfer the mixture from the skillet to a casserole dish.
11.Bake for 35-45 minutes until the surface turns golden brown and crispy.
12.Garnish with coriander or cilantro, then serve.
