250 g canned pitted cherries
1/4 cup caster sugar
1/2 cup water
1 teaspoon cornflour
250 g cream cheese , at room temp
1 cup cream
2 tablespoons powdered sugar
1 teaspoon vanilla bean paste or 2 teaspoons vanilla extract
1 teaspoon ground cinnamon
2 teaspoons gelatin powder
This Upside Down Cherry Vanilla Cheesecake recipe is a fun twist on a classic dessert. Instructions

1.Preheat your oven to 350°F (175°C).
2.In a small saucepan, heat the canned cherries, caster sugar, water, and cornflour over medium heat. Cook until the mixture thickens and the cherries have broken down, for around 5-7 minutes.
3.Remove from heat and pour the cherry mixture into the bottom of a silicone fluted cake pan. Allow to cool.
4.In the bowl of a stand mixer, beat the cream cheese, cream, powdered sugar, vanilla bean paste or extract, and cinnamon together until a smooth mixture forms.
5.Dissolve the gelatin powder in a small amount of hot water and stir until completely dissolved. Add to the cream cheese mixture and combine well.
6.Pour the cream cheese mixture over the cherry mixture in the cake pan and smooth out the top with a spatula.
7.Bake for 30 minutes until the center is set, then chill for at least 2 hours before serving.
8.To serve, place a plate upside down over the cake pan and flip to release the cheesecake onto the plate. Serve chilled and enjoy!
