150 ml egg whites , approximately 4 eggs
1 cup caster sugar , superfine
1 teaspoon white vinegar
1 1/4 cups cream , to serve ( thick )
16 strawberries , hulled and halved
1/3 cup caster sugar , extra for the roasted strawberries

Instructions

1.Preheat the oven to 140C/285F and line a baking tray with baking paper.
2.In a large bowl, beat egg whites using an electric mixer until soft peaks form. Gradually add caster sugar, 1 tablespoon at a time, beating well after each addition until the mixture is thick and glossy.
3.Add vinegar and beat for another minute or until well combined.
4.Use a spoon or piping bag to create 8 meringue nests on the prepared baking tray.
5.Bake for 1 hour or until the meringues are crisp on the outside and soft on the inside.
6.In the meantime, preheat a grill on high.
7.Place the strawberries on a tray lined with baking paper and sprinkle with the extra caster sugar. Grill for 2-3 minutes or until the sugar has caramelised and the strawberries are slightly softened.
8.Serve the meringues topped with whipped cream and grilled strawberries.
