225 g unsalted butter
125 g plain flour
1 teaspoon baking powder
90 g desiccated coconut
110 g caster sugar
100 g brown sugar
400 ml condensed milk
2 tablespoons golden syrup

150 g 70 % dark chocolate
15 g unsalted butter , extra

Instructions

1.Preheat your oven to 180°C (356°F).
2.Combine the butter, flour, baking powder, coconut, caster sugar and brown sugar in a large bowl until well mixed.
3.Press the mixture firmly into a lined rectangular baking dish.
4.Bake for 15-20 minutes or until golden brown.
5.In a saucepan, heat the condensed milk, golden syrup and vanilla extract until the mixture thickens and turns a caramel colour.
6.Pour the caramel over the baked base and smooth it out.
7.Melt the dark chocolate and extra butter in the microwave or over a double boiler.
8.Pour the chocolate over the top of the caramel layer and smooth it out.
9.Set it aside in the fridge to set for at least 2 hours.
10.Once set, remove from the fridge and slice into squares to serve.
