Ingredients

160 g wholemeal self-rising flour
75 g self-raising flour
40 g low-fat butter
1 tablespoon parsley ( freshly chopped )
2 teaspoons dill ( freshly chopped )
2 teaspoons chives ( freshly chopped )
125 ml skim milk
self-raising flour , for dusting ( extra )
125 g light sour cream ( extra light recommended - 1/2 cup )
1/2 teaspoon lemon zest ( finely grated )
1 teaspoon lemon juice ( fresh )
2 teaspoons dill ( freshly chopped )
2 teaspoons parsley ( freshly chopped )
80 g smoked salmon ( cut into small pieces )
2 slices limes ( thin and finely chopped )
fresh ground black pepper
These mini herbed scones with smoked salmon are a perfect combination of sweet and savory flavors in a bite-size portion that’s easy to handle and pack in. Scones are made with freshly chopped herbs and wholemeal flour for a more wholesome taste that blends with the smokiness of the salmon for a rich and satisfying treat. The creamy dollop of sour cream infused with lemon and black pepper gives the scone an extra tang that complements the combination in a way that’s perfect for any social event or as an alternative to a boring lunch sandwich.

Instructions

1.Preheat the oven to 200°C (400°F) and line a baking tray with baking paper.
2.In a large mixing bowl, combine the wholemeal flour, self-raising flour, chopped herbs and low-fat butter. Mix well until the mixture looks like breadcrumbs.
3.Add the skim milk, a little at a time, and mix until a soft dough forms.
4.Roll out the dough on a floured surface to a thickness of about 2cm.
5.Use a small cookie cutter to cut out the scones and place them on the lined baking tray.
6.Dust the tops of the scones with a little extra self-raising flour and bake in the preheated oven for 12-15 minutes, or until lightly golden.
7.In a small bowl, mix together the light sour cream, lemon zest, lemon juice, fresh herbs and black pepper. Spread the sour cream mixture onto each scone.
8.Top each scone with a piece of smoked salmon and sprinkle with chopped lime and a little extra black pepper.
