Ingredients

1 sheet puff pastry ( cut into 8 rectangles or matchsticks )
2/3 cup caster sugar
2/3 cup cornflour
3 1/4 cups milk
1 tablespoon vanilla extract
3 egg yolks
2 tablespoons butter
1/2 cup cream ( whipped )
2 passion fruit ( seeds and juice of )
2/3 cup icing sugar

Instructions

1.Preheat the oven to 200°C and line a baking tray with parchment paper.
2.Place the puff pastry on the prepared tray and prick the surface with a fork to prevent it from puffing up during baking.
3.Bake for around 15 minutes or until golden brown and crispy. Let it cool.
4.In a medium-sized saucepan, whisk together sugar, cornflour and milk until well combined. Add vanilla extract, egg yolks and butter. Cook over medium heat stirring constantly until the mixture has thickened.
5.Remove the mixture from the heat and let it cool. Spread evenly over the cooled pastry base. Add whipped cream on top.
6.In a small bowl, whisk together the passion fruit juice and icing sugar until a smooth consistency is achieved. Pour over the whipped cream layer.
7.Chill in the refrigerator for a few hours or until set. Cut into rectangular slices and serve chilled.
