5 lemons , scrubbed , zested and juiced
275 g caster sugar
2 packets powdered gelatin
4 bunches green seedless grapes
1 egg white
25 g caster sugar

Instructions

1.In a saucepan over medium heat, combine the lemon zest, lemon juice, caster sugar, and gelatin powder. Stir until all the sugar has dissolved.
2.Pour the mixture into a 9x9 inch baking dish and refrigerate for 2-3 hours, or until set.
3.Meanwhile, separate the egg white and place it in a bowl. Whisk until frothy and then add caster sugar. Continue whisking until the egg white is stiff and glossy.
4.Wash the grapes and let them dry. Dip each grape bundle into the frothed egg white and then roll it in sugar until all the grapes are coated.
5.Place the grapes on a wire rack and allow them to dry.
6.Once the jelly has set, cut it into cubes and serve cold with the frosted grapes on top.
