Ingredients

2 medium butternut squash
4 tablespoons olive oil , divided
kosher salt & freshly ground black pepper
1/4 cup shelled pumpkin seeds ( pepitas )
1 tablespoon aged balsamic vinegar
1/4 cup fresh mint leaves , torn
Roasted Butternut Squash with Mint and Toasted Pumpkin Seeds is a delicious vegetarian dish that is perfect for the fall season. Instructions

1.Preheat oven to 375 degrees F. Line a large baking sheet with parchment paper.
2.Cut off ends of butternut squash and peel skin with a vegetable peeler. Cut in half lengthwise and scoop out seeds and pulp. Cut squash into 1-inch pieces.
3.In a large bowl, toss squash with 2 tablespoons of olive oil, salt, and pepper. Spread squash onto baking sheet in a single layer.
4.Roast the squash for 30 to 35 minutes, or until tender and golden brown.
5.While the squash is roasting, heat a small skillet over medium heat. Add pumpkin seeds and toast until golden and fragrant, about 3 to 4 minutes. Set aside.
6.In a small bowl, whisk together remaining 2 tablespoons of olive oil and balsamic vinegar.
7.Once the squash is done, transfer it to a serving platter. Drizzle the balsamic vinaigrette over the squash. Sprinkle with toasted pumpkin seeds and fresh mint leaves. Serve hot.
