Ingredients

2 1/4 cups self-rising flour
1/3 cup brown sugar , firmly packed
3/4 cup milk
225 g crushed pineapple , well drained ( reserve juice )
1 egg , lightly beaten
90 g butter , melted
1/3 cup shredded coconut , toasted
125 g cream cheese , at room temperature
1/2 cup icing sugar
2 -3 drops coconut essence

Instructions

1.Preheat oven to 180°C / fan forced 160C.
2.Spray 12 x 1/3 cup muffin tin with cooking spray.
3.In a bowl, sift self rising flour and stir in the brown sugar.
4.In another bowl, beat the milk, reserved pineapple juice, egg and melted butter together until everything is combined.
5.Add crushed pineapple and toasted coconut to the liquid mixture and then stir well.
6.Pour the liquid mixture into the dry ingredients and gently stir until just combined.
7.Divide the mixture evenly among the prepared muffin tins.
8.Bake for 20-25 minutes or until the muffins are golden-brown and toothpick inserted in the center of the muffin comes out clean.
