Ingredients

1 tablespoon olive oil
20 g unsalted butter
1 leek , sliced
600 g desiree potatoes , peeled , diced
1 liter chicken stock
3 lebanese cucumbers , trimmed , diced
4 garlic cloves , minced ( optional )
2 tablespoons olive oil , extra
2 tablespoons champagne or 2 tablespoons white wine vinegar
12 medium green prawns , peeled , deveined or 12 medium perhaps twice this number of smaller shrimp
fresh ground black pepper , to serve
extra virgin olive oil , to serve
fresh dill ( optional ) or fresh parsley , to serve ( optional )

Instructions

1.Heat the olive oil and butter in a large pan over medium-low heat.
2.Add the leek and gently fry for 5 mins until soft.
3.Add the potatoes and stock and bring to the boil.
4.Reduce heat and simmer for 25 mins until potatoes are soft.
5.Add the cucumbers and garlic and cook for 5 mins.
6.Remove from heat and blend until smooth. Chill in the fridge for at least 2 hrs.
7.Combine olive oil, champagne or white wine vinegar, and black pepper in a bowl.
8.Poach the prawns in boiling water for 2-3 mins or until cooked through, then add to the marinade.
9.Serve soup with prawns, drizzle extra virgin olive oil, and garnish with fresh dill or parsley as desired.
