Ingredients

5 cups mixed fruit
1 1/2 cups orange juice
2 eggs , beaten slightly
2 cups self-raising flour
1 teaspoon nutmeg
1 teaspoon cinnamon

Instructions

1.In a large bowl, mix together the mixed fruit and orange juice, cover and leave overnight to soak.
2.Preheat your oven to 150°C.
3.Add the beaten eggs to the fruit mixture, stir well.
4.Sift together the self-raising flour, nutmeg and cinnamon and gradually stir it into the fruit and egg mixture until everything is well combined.
5.Pour the mixture into a greased and lined 20 cm cake tin.
6.Bake for 1 hour and 30 minutes until the cake is golden and a skewer inserted into the centre comes out clean.
7.Let it cool for 30 minutes in the tin, then transfer to a wire rack to cool completely.
