Ingredients

1 1/2 cups rice bubbles
1 cup full cream powdered milk
1 cup desiccated coconut
2/3 cup glace cherries ( red & green mixture )
1/4 cup sultana
1 cup icing sugar
250 g Copha

Instructions

1.Grease and line a 20cm square cake tin with baking paper.
2.In a large bowl, mix the rice bubbles, powdered milk, desiccated coconut, glace cherries, and sultanas together until well combined.
3.Melt the Copha in a saucepan over low heat.
4.Add the melted Copha to the bowl of dry ingredients and mix well.
5.Pour the mixture into the prepared tin and smooth the top with the back of a spoon.
6.Place the tin in the fridge for at least 2 hours or until firm.
7.Once set, remove the White Christmas from the tin and cut it into small squares to serve.
