Ingredients

1/2 small pineapple
50 g shredded coconut
50 g palm sugar , grated
1/2 teaspoon vanilla extract
1/4 teaspoon ground star anise
60 ml milk
white sugar , for sprinkling
80 g icing sugar , sifted
2 egg yolks
250 g plain flour
125 g unsalted butter , shilled and finely chopped
1 tablespoon chilled water
1 pinch salt

Instructions

1.In a bowl, mix the flour, butter, and salt together until the mixture resembles breadcrumbs.
2.Add the chilled water and mix until the dough comes together.
3.Wrap the dough in clingfilm and refrigerate for 30 minutes.
4.Preheat the oven to 180°C. Grease a baking tray.
5.Cut the pineapple into small chunks and mix with shredded coconut, grated palm sugar, vanilla extract, ground star anise, and milk.
6.Roll out the dough to about 3mm thickness and cut into 10cm circles.
7.Brush the edges of each circle with water and add a tablespoon of the filling to the centre.
8.Fold the circle into a semicircle and crimp the edges with a fork to seal.
9.Sprinkle with white sugar and bake for 20-25 minutes until golden brown.
10.Mix icing sugar and egg yolks together and drizzle over the turnovers. Enjoy warm!
