Instructions

1.Preheat oven to 160°C fan-forced.
2.Line the base and sides of a deep 22cm round cake tin with baking paper.
3.In a large bowl, cream together butter and brown sugar until light and fluffy.
4.Add eggs one at a time, beating well after each addition.
5.Stir in the mixed fruit, sultanas, cherries, raisins, and nuts.
6.Sift flour, spice, and bicarbonate of soda over the fruit mixture and fold together until combined.
7.Gradually add juice and brandy, mix well.
8.Spoon mixture into the prepared tin, smoothing the top.
9.Bake in the oven for 2 hours, or until a skewer inserted into the centre of the cake comes out clean.
10.Remove from oven and allow to cool in the tin.
11.Once cooled, pour extra brandy over the top of the cake, cover and store in an airtight container.
