Ingredients

350 -450 g celeriac
15 ml sunflower oil
75 g blanched & toasted almonds ( I toast them in a dry non-stick pan , shaking over a medium heat )
1 carton sour cream
2 teaspoons Dijon mustard
15 ml olive oil
salt and pepper

Instructions

1.Peel and cut celeriac into chunks. Blanch in a pot of boiling water for about 5 minutes, until tender.
2.Drain the celeriac and toss with sunflower oil.
3.Cut the almonds into small pieces and toast them in a non-stick pan over medium heat. Set aside.
4.In a bowl, whisk together sour cream, Dijon mustard, and olive oil. Season with salt and pepper to taste.
5.Add the celeriac to the bowl and toss until evenly coated with the dressing.
6.Serve the salad cold, topped with the toasted almonds.
